after being away from the blog for almost 2 weeks, i have kinda missed it a whole bunch....
i have been cleaning out, painting, cleaning out, sweeping, cleaning out, eating, cleaning out, making, cooking, baking, preserving, cleaning out.
i have had a junk room always and forever. and a sewing/knitting/craft room always and forever. and then i realized: its time to cut the cord on the junk. so even though i am not done yet, i have made some sure progress and i am hoping it will bring me a little less stress.
i have been working on finishing my sweet sweet sweater... but more on that later.
after much delay.....
here is how i can peaches.
sterilize your jars, rings, and lids in boiling hot water bath for 10 minutes.
while doing that:
begin boiling together 4 cups water and 1 1/2 cups sugar to make syrup.
while doing that:
skin at least 20 peaches.
cut into segments.
have 2 separate bowls. one bowl for peaches that are slightly bruised and one bowl for perfect peaches.
take out your jars carefully.
fill them with the perfect peaches. leave 1 inch head space.
fill jars with syrup to 1 inch head space.
you may have more or less syrup than you need. but the good news is, it doesn't take long to make a little bit more. it really depends on how big your peaches are.
put your lids on your jars.
process in hot water bath for 30 minutes.
refer to your canning kettle manual for instructions on how much water to use in your water bath.
so, for the second bowl of imperfect peaches... make a cobbler.
i made 3 cobblers. i baked one. i froze the other 2 unbaked.
ps. while staying with a friend this weekend, delicious food was made and eaten. homemade pimento cheese that was truly like heaven. some spaghetti squash that was pretty much amazing. and a fresh delicious key lime pie with fresh whipped cream. oh how i love you key lime pie.
someone asked me the other day what food cravings i have. here is the truth: i have always craved random foods. at any random minute, i could say that i was dying for a bonafide petro so that is what i have. and that wouldnt be weird. or i could say that i am craving a homemade bagel and so i make them. i pretty much just love food.
